Easy Sahjan Or Moringa Drumstick Vegetable Recipe For Lunch

Drumstick is known for its water retention, making it an excellent choice of vegetable to consume in summer. It can be cooked with other summer-friendly vegetables to prepare a heart plate of stir-fries for a lightweight meal. Here is the recipe.

Ingredients

1 tablespoon oil 1 chopped tomato 250 gm drumstick 1 teaspoon coriander powder 1 teaspoon mustard seeds 1 chopped onion 1 teaspoon cumin seeds Salt to taste ½ teaspoon red chilli powder 1 teaspoon coriander powder Fresh coriander leaves 2-3 garlic cloves

Step 1

Heat oil in a pan and let mustard and cumin seed splutter. A few seconds later, add minced garlic and saute it.

Step 2

Saute finely chopped onions until they become translucent. Add chopped tomatoes to the mix and wait for them to turn pushy.

Step 3

After 5-6 minutes, add spices like coriander powder, turmeric powder, salt, and red chilli powder. Let the spices roast for a few minutes.

Step 4

Add drumstick or moringa pieces to the mixture. It does not take much time to get cooked.

Step 5

Put on the lid and cook for 10 minutes. Remove the lid and saute the drumstick for a couple of minutes before turning off the flame.

Step 6

Garnish the stir-fry with fresh coriander leaves before you dig in. It can be paired with roti or rice as well for lunch or dinner.
