Sabudana khichdi becomes a staple in many Indian homes during the month of Sawan. Sabudana is light, easy to digest, and therefore, perfectly suited for a quick and healthy meal. Traditionally made with soaked sabudana (tapioca pearls), cumin, green chillies, peanuts, and potatoes, this dish strikes a perfect balance between simplicity, nourishment and deliciousness.
1 cup of sabudana 1 medium-sized Potato ½ cup of peanuts 1 teaspoon of cumin Seeds 1 sprig of curry Leaves 3-4 minced garlic cloves 1 teaspoon of grated ginger 4-5 green chillies Oil for cooking
Wash the Sabudana twice before preparing to cook. Add water to the amount of sabudana and keep it soaked for about 4 hours.
Peel and chop the potato into small cubes. At the same time, on medium heat, place a pan and add a few peanuts and dry roast them.
Cool it down. Remove the skin. Grind it into a coarse powder and keep it aside.
Transfer the soaked sabudana to a bowl. Add grounded peanut powder and salt. Mix this well and keep it aside.
Heat a pan and pour oil. Add the remaining peanuts, and fry them. Remove it. In the remaining oil, add cumin seeds and curry leaves.
Let it splutter. Add potatoes and let them cook till soft. Now add salt, cover, and let it simmer.
Next, add green chillies, garlic, and ginger. Give it a good mix and let it fry for a few more minutes. Add in the soaked sabudana. Cook for 5 minutes. Serve.
