If the winter strawberries are too sour or too bland, roasting them enables its sugars to caramelise as well as soften the fruit just enough to the point of deliciousness. Serve with ice cream, pancakes, cheesecake, creme brulee or even a plate of French toast at breakfast.
500 grams strawberries, hulled ¼ cup sugar 1 pinch salt 1 teaspoon vanilla extract 2-3 drops rose water Juice of ½ lemon
Combine the vanilla extract, rose water and lemon juice with the salt in a small bowl.
Preheat the oven to 190°C while cutting the strawberries into halves and adding them to a ceramic baking dish.
Sprinkle the sugar on top and mix lightly to combine before setting in the oven for 25 minutes.
Stir once again before adding the aromatic vanilla mixture to the fruit and baking further for 5-7 minutes.
Serve warm or refrigerate for up to 2 weeks to use as a thick, jammy syrup.
