Indori poha is a beloved dish that combines flavour, texture and aromas. Hailing from the city of Indore in Madhya Pradesh, this dish has won the hearts of food enthusiasts across the nation and beyond. This culinary masterpiece falls nothing short of its divine taste. Here’s how to make Indori poha: 

Ingredients

2 cups flattened rice (poha) 1 medium-sized potato, finely chopped 1 onion, finely chopped 1 tomato, finely chopped 2-3 green chilies, finely chopped 1/2 cup peanuts 8-10 curry leaves 1 teaspoon mustard seeds 1 teaspoon cumin seeds 1/2 teaspoon turmeric powder 1/2 teaspoon red chili powder Salt to taste 2 tablespoons oil Fresh coriander leaves for garnish Lemon wedges for serving 

Step 1

Rinse the flattened rice in water and drain it. Keep it aside. 

Step 2

 Heat oil in a pan. Add mustard seeds and cumin seeds. Once they splutter, add peanuts and roast until they turn golden brown. Add chopped potatoes and sauté until they are cooked through. 

Step 3

Add chopped onions, green chilies, and curry leaves. Sauté until the onions turn translucent. Add chopped tomatoes and cook until they soften. 

Step 4

Add turmeric powder, red chili powder, and salt. Mix well. Now add the rinsed flattened rice to the mixture. Gently mix everything together until the poha is evenly coated with the spices. Cook for a few minutes on low heat.

Step 5

Garnish with fresh coriander leaves. Serve hot with lemon wedges on the side.
