1 large eggplant 1 large zucchini 1 yellow squash 1 onion 2 cloves garlic 1 red bell pepper canned crushed tomatoes 1 tablespoon dried oregano 1 teaspoon dried basil 1/2 teaspoon salt 1/4 teaspoon black pepper Olive oil

Preheat the oven to 375°F (190°C). Prep the veggies with salt and squeeze out excess liquid.
Heat olive oil, onion, and garlic until softened. Stack eggplant, zucchini, yellow squash, and bell pepper and cook.
Pour crushed tomatoes and stir in oregano, basil, salt, and pepper.
Transfer the skillet to the preheated oven and bake for 30-40 minutes.
