Easy Ratatouille Recipe: How To Make The French Classic At Home

Ratatouille is a French delicacy made by slowly cooking sliced seasonal produce until it reaches a soft, uniform texture. It is popular for its aesthetic appeal, use of easily available ingredients, vegetarian-friendly character while also being suitable to serve as a side or main.

INGREDIENTS

1 cup sliced eggplant 1 cup sliced courgette 1 cup sliced tomatoes 1 cup sliced bell peppers ½ cup sliced onions 2 tbsp olive oil 1 tsp black pepper 1 tsp mixed herbs Salt, to taste

STEP 1

Drizzle some olive oil in a baking dish before beginning to layer the sliced vegetables around the circumference.

STEP 2

Continue to form a pattern alternating between the sliced eggplant, onions, bell peppers, courgette and tomatoes.

STEP 3

Fill up the dish in a single layer before sprinkling some salt, pepper and fresh herbs on top.

STEP 4

Bake in a hot oven for 20-30 minutes until the vegetables begin to curl at the edges, at 170°C.

STEP 5

Cool slightly before portioning it and serving hot on a plate over tomato sauce.
