A great activity to get all the family members involved on the weekend is to make pizzas together—for which making a delicious pizza sauce is part of the mis en place, before the fun commences. Make a large batch of this sauce to stow away in the freezer to use up even for a quick weeknight pasta dinner.
3-4 large tomatoes 1 onion, chopped 4-5 garlic cloves, minced 2 sprigs fresh basil 1 teaspoon crushed oregano 1 teaspoon red chilli flakes 1 tablespoon olive oil Salt, to taste Pepper, to taste 1 pinch sugar
Blanch the tomatoes in boiling water for 5 minutes before dunking them in some cold water and peeling.
Crush the tomatoes roughly using your hands and set aside in a bowl.
Heat some olive oil in a pan followed by adding in the red chilli flakes and garlic.
Cook for a minute and tip in the chopped onion to saute until soft and translucent.
Add in the crushed tomatoes before seasoning with salt, pepper and oregano.
Simmer the sauce for 7-8 minutes, until the tomatoes deepen in colour and finish with a pinch of sugar to balance acidity.
Cool and layer over pizza dough or store in a jar to use later over cooked pasta.
