Easily adaptable in both cocktail and mocktail forms, the piña colada brings tropical flavours together in a deliciously creamy combination of pineapple and coconut. Make a large batch of this foundational recipe to serve with white rum in a cocktail or as is for guests who prefer their beverages zero-proof.
45 ml coconut cream 45 ml pineapple juice 15 ml lime juice 60 ml white rum (optional) Pineapple wedge, for garnish
Combine the coconut cream, pineapple and lime juices in a shaker filled with ice.
Shake vigorously for 15-20 seconds to combine; add the rum with the remaining ingredients if making a cocktail.
Strain into a chilled hurricane glass filled with ice.
Garnish with a wedge of pineapple and serve with an eco-friendly straw.
