Having a batch of fresh, homemade pesto not only means that the flavours are vibrant but also enables one to play with proportions to tweak the base recipe according to preference. This delicious recipe can be made using any pasta variety of choice along with the addition of protein or vegetables to make a balanced meal.
2 cups fresh basil ¾ cup grated parmesan cheese ½ cup olive oil 10-12 almonds Juice of 1 lemon 1 pinch sugar Salt, to taste Pasta of choice
Put a pot of water to boil the pasta while adding the basil, cheese, olive oil and almonds to a mixer jar along with the lemon juice, sugar and salt.
Blend to a coarse paste and transfer to a bowl before cooking the pasta for 8-10 minutes.
Add the pesto to a mixing bowl along with the cooked pasta and toss for a couple of minutes to mix thoroughly.
Pour in a few drops of pasta water, adjust seasoning and ensure that the pesto clings to the pasta.
If using chicken or vegetables, sauté separately in olive oil before adding it to the preparation. Serve warm.
