A protein-packed meal is always necessary for day-to-day functioning as well as fuelling the body for hectic work days. Having a one pot lunch recipe means that meals like the chicken pulao can be relished when hot and even saved for later.
250 grams boneless chicken thighs, cubed 1 cup rice 2 cups water 1 onion, finely chopped 2 tablespoons ginger-garlic paste 2 green chillies, slit lengthwise 1-inch piece cinnamon stick 2 cloves 1 teaspoon cumin seeds 1 bay leaf ½ teaspoon garam masala 1 tablespoon ghee 2 tablespoons chopped coriander Salt, to taste
Heat the ghee in a heavy-bottomed pan and bloom the whole spices before adding in the green chillies.
Once it begins to splutter, sauté the onions and ginger-garlic paste for a couple of minutes until aromatic.
Add the chicken thighs and season with salt before pouring in half a cup of water and covering the pan with a lid.
Cook the chicken for 5 minutes before tipping in the rice and adjusting seasoning as necessary.
Mix well to combine and pour in the remaining water; simmer for 12-14 minutes until the rice is fully cooked.
Sprinkle some garam masala and use a fork to mix everything well before garnishing with lots of chopped coriander. Serve hot.
