A burrito bowl brings together the flavours of a burrito without the tortilla. Each element is cooked and seasoned separately, which keeps the bowl balanced and allows textures to stay distinct. It works well for meal prep, lunch, or a quick dinner.
1 cup cooked rice (white or brown) 1 cup cooked kidney beans or black beans 1 cup mixed vegetables (capsicum, onion, corn) ½ tsp cumin powder ½ tsp paprika or chilli powder Salt and black pepper to taste 1 tbsp olive oil ½ cup fresh tomato salsa ½ avocado, sliced 2 tbsp sour cream or thick yoghurt
Warm the rice and beans separately, seasoning lightly with salt and spices.
Heat olive oil and sauté vegetables until tender but still slightly crisp.
Arrange rice, beans, and vegetables in serving bowls.
Top with salsa, avocado, and sour cream.
Serve immediately, mixing just before eating.
