The joys of pairing a beautifully roast chicken and vegetables with mashed potatoes for a holiday spread is very gratifying. Buttery, creamy and easy to throw together, leftover mashed potatoes also make for delicious leftovers that can be repurposed into a multitude of meals or snacks.
500 grams new potatoes ¼ cup heavy cream 3 tablespoons butter ¼ teaspoon grated nutmeg 1 tablespoon chopped chives Salt and pepper, to taste
Boil the potatoes until the skin begins to separate slightly from the vegetable.
Drain and rinse the potatoes briefly under cold water before peeling them while still hot.
Use a box grater or potato ricer to turn the potatoes into thin shreds, adding it to the same saucepan.
Add the heavy cream, two tablespoons of butter and nutmeg before mixing well to combine.
Season with salt and pepper before transferring to a serving plate and topping with the remaining butter and chives. Serve warm.
