Ingredients

3 ripe Hass avocados  1/2 small red onion, finely diced  1 ripe tomato, deseeded and finely chopped  1/4 cup fresh coriander leaves, finely chopped  1 green chilli or jalapeño, finely minced  Juice of 1 fresh lime  Coarse sea salt to taste

Step 1

Slice the avocados in half, remove the stones carefully, and scoop the rich flesh out into a large bowl or a traditional stone mortar.
