Korean style sweet chilli potato is a delicious side dish that adds a sweet, spicy and savoury flavour to any meal. This recipe coats crispy fried potatoes in a sticky, sweet chilli sauce that is delicious and easy to make:
3 medium russet potatoes Oil 1/2 cup corn starch 1/4 cup all-purpose flour 1 large egg, beaten 1/4 cup sweet chilli sauce 2 tsp soy sauce 1 tsp rice vinegar 1 tsp sesame oil 2 cloves garlic, minced 1 tsp ginger, minced 2 green onions, thinly sliced
Rinse cubed potatoes in cold water until clear, then drain and pat dry.
Heat oil in a pot or Dutch oven over medium-high heat, about 2 inches deep.
Toss potatoes with corn starch and flour, dip in beaten egg, then coat again.
Fry potatoes in batches for 2-3 minutes until golden and crispy, then drain.
Mix sweet chili sauce, soy sauce, rice vinegar, sesame oil, garlic, ginger, and green onions.
Toss fried potatoes in the sauce to coat evenly.
Transfer to a platter, garnish with green onions, and enjoy while crispy.
