Mutton rogan josh is a traditional Kashmiri dish, slow-cooked with yoghurt, onions and a mixture of spices. Garlic, ginger, Kashmiri red chilli powder, and other spices are soaked into the meat. This is a step-by-step recipe for beginners.
500 grams of mutton ½ cup of yoghurt or curd 2 tablespoons of ginger-garlic paste 2 medium sized onions, finely chopped 2 teaspoons of Kashmiri red chilli powder 1 teaspoon of cumin powder 1 teaspoon of fennel seeds A few Coriander leaves Salt to taste Cooking oil as required
In a bowl, put in the mutton. Add ginger-garlic paste, yoghurt and spices. Mix it well. Let it marinate for 2-4 hours.
Take a pressure cooker. Heat the oil. Add the onions and saute until golden brown.
Add the marinated mutton. Let it cook until the colour changes.
Add water. Cover the pressure cooker with the lid. Cook the mutton for about 30 minutes.
Once the mutton is tender, remove the lid. Garnish with coriander leaves. Serve mutton rogan josh with naan, roti or rice.
