Packed with a flavoursome and refreshing punch, this mango pudding is a lovely light way to end a heavy meal!
2 mangoes, cubed 2 cups of water 140g mango purée, fresh or tinned 3.5 tsp gelatin 1 tin of evaporated milk 25g of sugar Pomelo & mint leaves, for garnish
Combine 2 cups of water with mango purée in a pot. Add the gelatin and sugar.
Gently cook till gelatin dissolves. Add the tin of evaporated milk. Add ¾ of the cubed mangoes.
Pour into serving glasses or ramekins and chill for 8-10 hours.
To serve, pour some of the remaining evaporated milk on top.
Garnish with the remaining mango cubes, pomelo and mint leaves. Enjoy!
