With eggs giving a significant amount of protein, this salad is perfect to have as a filling weekend brunch, post-workout meal, or even as a light dinner. The spicy garlic dressing keeps it enjoyable, whereas the eggs make it fulfilling enough to keep your hunger at bay for longer.
6 eggs, boiled and peeled 1 tbsp oil 5 garlic cloves, finely chopped 2 dried red chillies, crushed 1 green chilli, chopped 1 small onion, sliced 1 tbsp soy sauce 1 tsp vinegar ½ tsp black pepper Salt to taste 1 tbsp spring onion greens 1 tsp sesame seeds (optional) Lettuce or cucumber slices for serving
Boil the eggs and let them cool down thoroughly, peel them, and cut them into four pieces.
In a pan, heat oil and add chopped garlic and crushed red chillies to it. Cook this until the garlic turns golden and the raw fragrance fades.
To this, now add sliced onions and slit green chillies. Stir it briefly, just until the onions turn soft and have some crunch.
Now, to the pan, add soy sauce, vinegar, black pepper, and salt. Cook the sauce for a minute so that it gets a deep flavour.
Once cooked, add the boiled eggs and gently toss them so that the chilli garlic mixture covers every piece.
Serve the prepared salad, sprinkle with spring onions and sesame seeds on top, and pair with fresh cucumber or lettuce for a protein-packed weekend meal.
