Achar is one of the winter staples that everyone loves! Gunda achar is an Indian pickle made from gunda, which is also known as bird lime fruit. It has a tangy, spicy, and slightly sticky texture that goes well with Indian food. It tastes and smells great with parathas, dal-rice, or curd rice.
250 g gunda (bird lime fruit) 2 tbsp mustard seeds 1 tbsp fenugreek seeds 2 tbsp red chilli powder 1 tbsp turmeric powder 3 tbsp salt 200 ml mustard oil
First, wash and dry the gunda fruits very well.
When the mustard oil starts to smoke, take it off the heat and let it cool down a little.
Add coarsely crushed mustard and fenugreek seeds to red chilli powder, turmeric, and salt.
Make a cut in each gunda and fill it with the spice mix.
Put warm oil over the stuffed fruits, mix them well, and put them in a clean jar for a week to let them develop in flavour before serving.
