Biting into thick, sweetened milk, be it paired with crispy jalebi or as is served in a kulhad, is sheer joy for a sweet tooth. If you love the traditional Gujarati dessert, basundi, why don’t you make it in your kitchen?
1 litre milk 1/2 cup sugar 4-5 strands saffron 4-5 green cardamom pods A pinch of nutmeg 2 tablespoons chopped almonds 2 tablespoons chopped pistachios 2 tablespoons chopped cashew nuts
Boil the milk and then let it simmer till it is reduced to half its volume.
Add crushed cardamom, saffron, and nutmeg. Stir well to combine the flavours.
Once the milk has thickened, add sugar and stir till it dissolves.
In another pan, lightly roast chopped nuts.
Garnish the basundi with roasted nuts, and your dessert will be ready.
