2 cups of clarified butter, or ghee 2 cups of sugar 4 cups of water 1/2 cup of cornflour 2 teaspoons of rose water 1 teaspoon of warm water-soaked saffron strands 1 teaspoon of cardamom powder 1 cup of chopped nuts, such as walnuts, cashews, or almonds 1 cup of chopped dates 2 tablespoons of lemon juice 1 tablespoon of optional orange food colouring 2 teaspoons of optional vanilla extract
After soaking the saffron threads in a tablespoon of warm water, set them aside. This aids in releasing the colour and scent.
Heat the ghee in a big pan with a heavy bottom over medium heat. Add two cups of sugar to the heated ghee and whisk until the sugar dissolves completely.
Stirring constantly, let the sugar and ghee mixture cook for approximately five minutes. The mixture will start to get a little thicker.
Add the water and cornflour combination to the ghee and sugar mixture.
Continue swirling until the mixture begins to take on the consistency of a gel.
For 20 to 30 minutes, keep cooking the halwa mixture over low heat. Move it to a mould or dish that has been oiled. Use a spatula to smooth the top.
Allow it to cool at room temperature. After the halwa has hardened, cut it into cubes or squares to serve.
