To make South Indian staple idlis, you need to first prepare a soft batter. Once you have made the perfect batter, you can use it to prepare dishes like idli, dosa, uttapam, appam, etc. Follow this short guide to master the art of making idli batter.
1 cup idli rice ½ cup urad dal ¾ cup chilled water 2 tbsp thick poha Salt to taste ½ cup water ½ tsp fenugreek seeds
Soak urad dal, fenugreek seeds, and idli rice overnight.
After 6 hours, drain the water and blend them separately. You can grind dal, poha, and seeds together.
Combine rice and lentil blends. Keep it aside for fermentation for 8-14 hours.
You will witness a rise in the pot that indicates the batter has been fermented to perfection.
Pour it into idli moulds and cook for 20 minutes.
Soft and fluffy idli will be ready in no time.
