Easy Frozen Coffee Pudding For An Indulgent Summer Dessert

Coffee desserts are one of the most indulgent treats as they add a unique flavour to the dishes. This frozen coffee pudding is the ideal treat to enjoy during the hot months of summer. It's easy, uses staple pantry ingredients, and comes together quickly.

Ingredients

2 cups strong brewed coffee, cooled 1 cup heavy cream 1 cup whole milk 3/4 cup sugar 4 egg yolks 1 tbsp cornstarch 1 tsp vanilla extract 1/4 tsp salt

Step 1

Combine coffee, cream, and milk in a saucepan. Heat until simmering. 

Step 2

In a bowl, whisk yolks, sugar, cornstarch, and salt.

Step 3

Slowly whisk the hot coffee mixture into the yolk mixture. Return to saucepan and cook until thickened, stirring constantly.

Step 4

Remove from heat, stir in vanilla, and let cool. Chill in the fridge.

Step 5

Transfer to a container and freeze for 4 hours. Scoop and enjoy.
