Easy Egg Sandwich Recipe To Make For A Weekday Breakfast

When hectic days are preceded by the need to ensure that one’s protein intake for the day is met without compromise, this egg sandwich recipe does the trick. Made using simple ingredients, this satisfying bite is ideal to relish for breakfast or as an early evening snack when feeling peckish.

INGREDIENTS

2 slice whole wheat bread 2 boiled eggs 1 tablespoon mayonnaise 1 teaspoon red chilli flakes 1 small onion, chopped 1 tablespoon chopped coriander 1 teaspoon Dijon mustard 1 lettuce leaf 3-4 slices tomato Salt and pepper, to taste

STEP 1

Toast the bread while peeling and chopping the boiled eggs, to combine with salt, pepper, mustard, mayonnaise, chopped onion and coriander in a separate bowl.

STEP 2

Layer a slice of the toasted bread with a lettuce leaf and tomato before spooning the egg mixture on top.

STEP 3

Sprinkle the red chilli flakes and use another slice of toasted bread to cover before cutting into two and eating warm.
