Easy Egg Fried Rice Recipe Ready In Minutes

Egg fried rice is a quick, flavourful dish made by stir-frying cooked rice with scrambled eggs, vegetables, and seasonings like soy sauce and sesame oil. It’s a versatile meal that can be enjoyed on its own or paired with curries and soups.

Ingredients

2 cups cooked rice (preferably a day old) 2 eggs 2 tbsp oil 1 small onion 1/2 cup mixed vegetables (carrots, peas, beans) 2 tbsp soy sauce 1 tsp vinegar Salt and pepper to taste Spring onions 

Step 1

Heat 1 tbsp oil in a large pan or wok. Beat the eggs, pour them into the pan, and scramble lightly. Remove and set aside.

Step 2

In the same pan, add the remaining oil and sauté onions until soft. Add mixed vegetables and stir-fry until slightly tender.

Step 3

Add the cooked rice, soy sauce, vinegar, salt, and pepper. Stir well to coat the rice evenly.

Step 4

Add the scrambled eggs back into the pan and mix gently.

Step 5

Garnish with chopped spring onions and serve hot.
