4 slices of fresh wholemeal or white sandwich bread  1/2 cup English cucumber, thinly sliced into rounds  1/2 cup juicy ripe tomato, thinly sliced  1/4 cup crisp carrot, grated  2 tbsp cream cheese or premium mayonnaise  1/4 tsp freshly cracked black pepper and a pinch of salt
Lay the fresh bread slices flat onto a clean chopping board and spread an even, generous layer of cream cheese or mayonnaise across every piece to form a protective barrier against moisture.
Arrange the thin cucumber and tomato slices carefully in overlapping rows across two of the greased bread pieces, ensuring the vegetable layers are perfectly flat.
