4 slices of fresh wholemeal or white sandwich bread  1/2 cup English cucumber, thinly sliced into rounds  1/2 cup juicy ripe tomato, thinly sliced  1/4 cup crisp carrot, grated  2 tbsp cream cheese or premium mayonnaise  1/4 tsp freshly cracked black pepper and a pinch of salt

Step 1
