Staying indoors on a cold winter evening and baking cookies is a great way to bond with loved ones and also usher the holiday season into homes. These simple Christmas cookies are a great foundation to decorate many different ways or even send to friends as edible gifts.
2 + ¼ cups all-purpose flour ¾ cup butter ½ teaspoon baking powder ¾ cup sugar 1 large egg 2 teaspoons vanilla extract 1 pinch salt (optional)
Combine the flour, baking powder and salt in a bowl to set aside.
Cream the butter and sugar until smooth before tipping in the dry mixture, egg and vanilla extract.
Use a spatula to fold into a dough and form a smooth ball; refrigerate for 60 minutes before rolling it out ¼-inch thick.
Use cookie cutters of various shapes to make cut outs and place them on a lined baking tray.
Preheat the oven to 177°C and bake the cookies for 10-12 minutes, depending on how undercooked or crisp one prefers.
Cool on a wire rack for 10 minutes before decorating with icing, frosting or ganache.
