A simple and delicious chicken sandwich is all about using fresh ingredients and ensuring that each bite contains all the dietary nutrients one might require on a daily basis. Whether it is for a light meal or for a quick snack to pack for the road, this recipe is easily adaptable depending on the kind of ingredients one has in stock.
2 slices whole wheat bread 1 chicken breast ¼ cup mayonnaise 2 lettuce leaves 4-5 slices tomatoes 1 teaspoon chilli flakes 1 tablespoon olive oil 1 teaspoon garlic powder Salt and pepper, to taste
Add the chilli flakes, garlic powder, salt and pepper to a dish along with the olive oil and mix well.
Coat the chicken breast with the seasoning and marinate it for 20-25 minutes while bringing a grill pan to heat.
Place the chicken breast to cook for 6-7 minutes on the first side and 3-4 minutes on the second side.
Cool slightly before shredding into pieces and mixing it with some mayonnaise.
Toast the slices of bread lightly before placing the lettuce, tomatoes and shredded chicken mixture over one of them.
Top it with a second slice of toasted bread, press lightly and cut into two crossways. Serve immediately.
