Broccoli soup is a creamy, light, and healthy dish that’s perfect for cold evenings. It’s full of nutrients and has a mild, comforting flavour that works well as a light dinner.
2 cups broccoli florets 1 onion (chopped) 1 cup milk 1 tbsp butter Salt and pepper to taste
Heat butter in a pan, add onion, and sauté until translucent.
Add broccoli and a little water, cover, and simmer for 5–7 minutes until tender.
Blend the mixture until smooth, then return to the pan and stir in milk, salt, and pepper.
Simmer gently for a few minutes and serve hot.
