Broccoli is in season right now, making it a good choice for salads as well as add colour and nutrition to brunch as well as breakfast menus. This seasonal veggie is a good way to start your day with vitamins alongside fibre while working well with quick meal prep and easily adding to a variety of meal plans for busy days.
2 cups broccoli florets, chopped 1 small onion, finely sliced 1 small carrot, grated ¼ cup raisins or dried cranberries ¼ cup roasted peanuts or almonds 3 tablespoons curd or Greek yogurt 1 tablespoon lemon juice 1 teaspoon honey Salt to taste Black pepper to taste
Cut the broccoli into small florets and wash them well under running water.
Put the onion slices, grated carrot, raisins, and nuts in a bowl to mix.
In a different bowl, mix together the curd, lemon juice, honey, salt, and pepper.
Put the dressing on the vegetables and stir until everything is covered.
Let the salad sit in the fridge for 15 minutes before serving.
