Beetroot rice is a vibrant and nutritious one-pot meal with the earthy sweetness of beetroot paired with spices, creating a wholesome meal perfect for lunchboxes or a quick weekend meal.
1 cup cooked rice 1 grated beetroot 1 tbsp oil or ghee 1 tsp mustard seeds 1 tsp cumin seeds 2 tbsp finely chopped onion 1 slit green chilli 1/4 tsp turmeric powder 1/2 tsp red chilli powder Salt to taste 1 tbsp chopped coriander leaves for garnish
Heat oil in a pan, add mustard seeds, cumin seeds and let them splutter.
Add onions, green chilli and sauté until soft, then add grated beetroot, turmeric, chilli powder and cook for 5 minutes.
Add cooked rice, salt, mix well and cook for another 2-3 minutes.
Sprinkle coriander leaves and serve hot with raita or pickle.
