Ripe bananas give this banana cake recipe a deep, almost toffee-like aroma, baking into a moist crumb with golden edges, gentle spice, and a softness that feels richer and more indulgent with every slice.
1½ cups all-purpose flour ¾ cup powdered sugar ½ cup oil 2 ripe mashed bananas ¼ cup milk 1 tsp vanilla essence 1 tsp baking powder ½ tsp baking soda ½ tsp cinnamon powder
Whisk mashed bananas, sugar, oil, milk, and vanilla until smooth, glossy, and well combined.
Sift flour, baking powder, baking soda, and cinnamon, then fold gently into the wet mixture.
Mix only until combined to avoid overworking the batter and keep the cake tender.
Pour into a greased tin and bake at 180°C for 35-40 minutes until a skewer comes out clean.
Cool completely before slicing to enjoy a moist, flavour-packed banana cake.
