Easy Avocado Toast Recipe To Recreate For Weekend Breakfasts

Loaded with good fats, avocados are a great source of nutrition and offer a neutral foundation to play around with plenty of flavour combinations. Mash or slice it to enjoy in the form of an avocado toast, topped with fried or boiled eggs for a creamy-crispy breakfast option that’s easy to assemble over the weekend.

INGREDIENTS

1 ripe avocado 2 slices sourdough bread 1 teaspoon lime juice 1 teaspoon red chilli flakes 1 teaspoon garlic powder (optional) 1 fried or boiled egg (optional) Salt and pepper, to taste Olive oil, for drizzling

STEP 1

Halve the ripened avocado and scoop out the pulp into a bowl to mash using a fork.

STEP 2

Add the lime juice, garlic powder, chilli flakes, salt and pepper to the mash while the bread is toasted slightly.

STEP 3

Spoon the avocado mixture over the toasted bread and drizzle some olive oil over each slice.

STEP 4

Top up with a fried egg or halved boiled egg before serving.
