Aglio olio is a simple Italian pasta where timing matters more than ingredients. Gentle heat prevents the garlic from browning, and pasta water helps the oil coat the strands evenly instead of turning greasy.

Ingredients

200 g spaghetti 4 tbsp olive oil 4 cloves garlic, thinly sliced ½ tsp chilli flakes Salt to taste ¼ cup reserved pasta water

Step 1

Cook pasta in well-salted water until al dente; reserve pasta water.

Step 2

Heat olive oil gently and add garlic, cooking until just fragrant.

Step 3

Add chilli flakes and pasta water, then toss in pasta.

Step 4

Mix well and serve hot with a simple salad or bread.
