Curd rice is a cooling and comforting South Indian recipe, which is a flavourful mix of creamy yoghurt, soft rice and aromatic tempering for any meal.
For the rice: 1 cup cooked rice ½ cup curd (yogurt) ¼ cup milk (optional, for a creamier texture) Salt to taste For the tempering: 1 tsp oil or ghee ½ tsp mustard seeds ½ tsp cumin seeds 1-2 dried red chillies 1 tsp urad dal A pinch of asafoetida (hing) 1 sprig curry leaves 1-2 finely chopped green chillies 1 tbsp grated ginger 2 tbsp chopped coriander leaves for garnish Pomegranate seeds for garnish
Mash 1 cup of cooked rice with curd, milk, and salt.
Heat oil, splutter mustard seeds, and fry urad dal, red chillies, hing, curry leaves, green chillies, and ginger.
Pour the tempering over the curd rice and gently mix.
Add coriander and pomegranate seeds to the curd rice.
Serve it chilled with pickles or papad.
