The best way to incorporate a week-old banana turning mushy is to add it to a dessert batter. Beyond banana bread, here’s how you can make soft banana cupcakes and enjoy a little treat post-meals.
2 cups maida ½ cup milk 1½ cups mashed bananas 1 cup sugar ½ cup butter 2 eggs 1 teaspoon baking soda ½ teaspoon salt 1 teaspoon vanilla extract
Preheat the oven, grease the cupcake moulds, and set aside till you make the batter.
Mix maida, baking soda, and salt together.
In another bowl, whisk eggs, butter, sugar, mashed bananas, and milk.
Mix the dry and wet ingredients together to get a batter and pour it into the moulds.
Bake for about 20 minutes and let them cool before icing the cupcakes.
