Mutanjan is a rich Mughlai dessert made with fragrant basmati rice, saffron, sugar, and dry fruits. Sweet, aromatic, and festive, this colourful rice delicacy is perfect for celebrations and special occasions.
1 cup basmati rice (soaked 30 minutes) 2 tbsp ghee 1 cup sugar 2–3 green cardamoms A few saffron strands (soaked in warm milk) 2 tbsp chopped dry fruits Rose water
Cook the rice until it is 90% done, then drain.
Heat ghee, add cardamoms, and sauté dry fruits until golden.
Add sugar and saffron milk, then stir until the sugar melts.
Mix in rice, cover, and let it cook on low flame for 10 minutes.
Sprinkle rose water and fluff gently. Serve warm or chilled.
