Easy 5-Step Egg Curry Recipe: Must-Try For Busy Weekdays

After a hectic day at work, you might not be in the mood to cook an elaborate dinner. Ready in minutes and high in protein, why don’t you try this egg curry recipe for a quick and comforting dinner?

Ingredients

6-8 large eggs 2 tbsp ghee 1 onion (chopped) 1 tsp ginger-garlic paste 1 tbsp oil (for frying) 2 tomatoes 1/2 tsp turmeric 1 tsp red chilli powder 1 tsp coriander powder 1/2 tsp cumin powder 1/2 tsp garam masala 1/4 cup yoghurt (optional) 1/2 cup water Salt to taste Coriander leaves (for garnish)

Step 1

Boil and peel the eggs. Add a pinch of turmeric and red chilli powder and shallow fry till golden.

Step 2

Heat some ghee and saute onions. Add ginger-garlic paste and cook for a few minutes.

Step 3

Add tomatoes, red chilli, coriander, and cumin powders. Whisk in yoghurt.

Step 4

Add water and salt. Let the curry simmer. Gently add fried eggs and mix in garam masala.

Step 5

After 5-10 minutes, garnish with coriander leaves and serve.
