Mishti Doi is a traditional Bengali sweet yoghurt enjoyed during Durga Puja. Its caramelised flavour and creamy texture make it a festive favourite.
500 ml full cream milk ½ cup jaggery or sugar (caramelised) 2 tbsp yoghurt culture
Boil milk until it thickens slightly.
Add caramelised jaggery or sugar and mix until dissolved.
Cool the mixture until lukewarm, then add yoghurt culture and whisk gently.
Pour into earthen pots or bowls, cover, and set overnight.
Serve chilled as a festive sweet.
