Drunken noodles are a popular Thai stir-fry made with wide rice noodles, vegetables, and a spicy sauce, often cooked with fresh basil for aroma. They are known for their bold, savoury-sweet-spicy balance.
200g wide rice noodles 1 cup mixed vegetables (bell peppers, carrots, beans) 2 tbsp soy sauce 1 tbsp oyster sauce 1 tsp chilli paste 2 garlic cloves (minced) 1 small onion (sliced) Fresh basil leaves 1 tbsp oil
Soak the rice noodles in warm water until soft, then drain.
Heat oil in a wok, add garlic and onion, and sauté for 1 minute.
Add vegetables and stir-fry for 2–3 minutes.
Add noodles, soy sauce, oyster sauce, and chilli paste. Toss well.
Add basil leaves and stir for 30 seconds before serving.
