Monsoon season calls for meals that keep you nourished from within, and drumstick soup fits in perfectly. Loaded with vitamins, antioxidants and fibre, this soup is a delectable way to enjoy the seasonal wellness at its best.
2 drumsticks, cut into 2-inch pieces 1 small onion, chopped 4 garlic cloves, chopped 1-inch ginger, chopped 1 small tomato, chopped 3 cups vegetable stock or water ½ tsp black pepper powder ½ tsp cumin powder 1 tbsp butter or olive oil 2 tbsp fresh coriander, chopped Salt, to taste Lemon juice, to serve (optional)
In a pan, heat olive oil, and sauté chopped onion, garlic and ginger until they turn aromatic.
To this, now add drumsticks, tomato and vegetable stock to this. Let everything simmer until soft and also release their flavour into the broth.
Remove the cooked vegetables from the pan and let everything cool down. Take out the drumstick pieces from this, and scratch out the soft pulp from within.
Now, blend these and cook again. Add cumin, black pepper and salt, then let it simmer again so that the flavours blend nicely.
Lastly, garnish with fresh chopped coriander, squeeze some lemon juice and serve hot with toasted bread for a hearty meal.
