Drumstick Sabzi: Iron-Rich Curry To Serve With Steamed Rice

Drumstick is a nutrient-dense ingredient that North Indians must include in their pantry. It is often found in South Indian curries because it is a good source of calcium, iron, vitamins, antioxidants, and magnesium. Here is how you can make a curry out of it.

Ingredients

2 tbsp sesame, peanuts 2 tsp poppy seeds 2 tbsp dry coconut, oil Water as needed 1 tsp ginger garlic paste 1 tsp mustard, cumin A pinch of hing 1 onion 7-8 curry leaves 2 tomatoes 20 drumsticks ½ tsp turmeric, cumin powder 1 tsp chilli, coriander 2 tbsp coriander leaves Salt to taste 1 tsp garam masala

Step 1

Dry roast peanuts, sesame seeds, coconut, and poppy seeds. Blend them with some water to make a smooth paste.

Step 2

Heat oil in a large kadhai and let cumin and mustard seeds splutter. Add hing and curry leaves too.

Step 3

Saute ginger-garlic paste and onion. Add powdered masalas after 5 minutes and cook the ingredients.

Step 4

When spices are aromatic, add tomatoes and wait for them to turn mushy.

Step 5

When the oil separates, add drumsticks along with water to adjust the consistency.

Step 6

After cooking for 15 minutes, garnish the gravy with coriander leaves and serve with rice.
