Pickle juice is actually loaded with a myriad of health benefits. It is not only rich in antioxidants, but because of the presence of garlic, mustard seeds and vinegar, it works as a great hangover juice, keeps you hydrated in the summers and aids in digestion.
2 cups of water 2 tablespoons of mango pickle 1 tablespoon of pickle oil 1 tablespoon of lemon juice ¼ teaspoon of black salt ¼ teaspoon of regular salt ¼ teaspoon of red chilli powder A pinch of asafetida or hing 1 tablespoon of crushed mint leaves
Pour 2 cups of water into a basin or jug. Add the mango pickle and gently mash to unleash the flavours.
Add the pickle oil, lemon juice, ordinary salt, black salt, cumin powder, chilli powder, and hing.
Make sure everything is thoroughly mixed by giving it a good stir.
If necessary, taste and adjust the sourness, salt, or spice.
Refrigerate for 10 to 15 minutes before serving. Strain and serve in glasses, or add pickle chunks for added flavour.
It can be consumed cold as a summer refresher. It also works well with lemon or mixed veggie pickles.
