Burrito bowls, originating from Mexican cuisine, are loved for their balance of nutrients, making them a popular choice for a hearty meal. They are perfect for quick lunches or gatherings, offering customisations and different textures in every bite.

Ingredients

For rice: 1 cup cooked rice 1 tsp lime juice 2 tbsp chopped fresh cilantro For protein: 1 cup cooked beans For the vegetables: 1 cup chopped lettuce 1/2 cup boiled corn kernels 1/2 cup boiled black beans 1/2 cup sliced cherry tomatoes 1/2 cup sliced and sautéed bell peppers Toppings: 1/4 cup shredded cheese 1/4 cup sour cream 2 tbsp sliced avocado 2 tbsp salsa

Step 1

Mix the cooked rice with lime juice and fresh cilantro and set aside.

Step 2

If using beans, season with salt, cumin, and a pinch of chilli powder.

Step 3

In a bowl, layer the rice at the bottom, add lettuce, black beans, corn, and sautéed bell pepper.

Step 4

Place the cooked protein on top of the vegetables, add shredded cheese, salsa, guacamole, and sour cream.

Step 5

Mix all the ingredients and enjoy as layered bites and serve with tortilla chips for extra crunch.
