Bengali Egg Curry or Dim Curry is a dish made with golden fried eggs and tender potatoes simmered in a rich gravy. This comforting dish beautifully pairs with rice or parathas.
4 boiled eggs 2 cubed potatoes 2 chopped onions 2 pureed tomatoes 1 tsp turmeric powder 1 tsp red chilli powder 1 tsp cumin powder ½ tsp garam masala 1 tsp cumin seeds 1 bay leaf 2 dried red chillies 3 tbsp mustard oil Salt to taste Water as needed
Fry boiled eggs and potatoes with turmeric and salt, until golden and set aside.
Heat mustard oil, splutter cumin seeds, bay leaf, dried chillies, then add onions and sauté them until they turn golden.
Add tomato puree, spices and cook until oil separates.
Add fried eggs, potatoes, water and simmer it until potatoes get tender.
Sprinkle garam masala and garnish with coriander leaves.
