Are you not making dhokla just because you don’t have a steamer? Don’t worry, here’s a hack. With just some minor tweaks in your khaman dhokla recipe, you can make the Gujarati snack in a pressure cooker.
For The Batter: 1.5 cups besan 3/4 cup water 1/2 tsp salt 1/4 tsp sugar 1/4 tsp turmeric powder 1 tsp baking soda 1 tsp oil For The Tadka: 2 tsp oil 1/2 tbsp mustard seeds 3-4 green chillies 12-14 curry leaves 1 cup water 1/2 tsp salt 4-5 tsp sugar Juice of 1/2 lemon
Whisk besan, water, salt, sugar, and turmeric powder till smooth. Let it rest for 10 minutes.
Add 1 cup of water to the pressure cooker. Place a metal stand in the cooker to elevate the surface.
Add baking soda to the batter. Pour the batter into a greased tray and place it in the cooker.
Close the lid without the whistle and steam for about 15 minutes.
Heat some oil, add mustard seeds, curry leaves, and chopped chillies, then sauté.
Pour some water and add salt, sugar, and lemon juice. Let the tadka simmer.
Cut the cooked dhokla into pieces, pour the tadka over them, and serve.
