Edamame chaat offers a vibrant, nutrient-dense twist on traditional street-food chaat, replacing chickpeas with tender, protein-packed green soybeans. Tossed with a zesty tamarind-mint dressing, crunchy onions, and a shower of sev, this modern appetizer bridges traditional Indian flavors with contemporary wellness-focused festive hosting for Diwali 2026.
2 cups shelled edamame beans (steamed or boiled until tender) 1 small onion, finely chopped 1 small tomato, deseeded and finely diced 2 tablespoons fresh pomegranate arils 2 tablespoons fresh coriander leaves, chopped 1 tablespoon green mint-coriander chutney 1 tablespoon sweet tamarind chutney 1/2 teaspoon roasted cumin powder and chaat masala Juice of half a lime Salt and black salt to taste Nylon sev for garnish
Boil or steam the shelled edamame beans for four to five minutes until tender, then plunge them into cold water to retain their bright green color and drain completely.
Transfer the edamame to a large mixing bowl along with the finely chopped onion, diced tomato, and fresh coriander.
Add the roasted cumin powder, chaat masala, lime juice, salt, and black salt, tossing everything together gently.
Drizzle the green chutney and sweet tamarind chutney over the top, mix lightly, and garnish with pomegranate arils and a generous handful of nylon sev before serving.
