Prepared with spinach, green peas and potatoes, these hara bhara cheese balls have a light, earthy, savoury filling with a creamy cheese interior. A crisp breadcrumb coating gives it crunch, whereas green chillies and chaat masala give this snack a gentle kick.
1 cup boiled potatoes, mashed ½ cup blanched spinach, finely chopped and squeezed dry ¼ cup green peas, boiled and mashed ½ cup grated cheese 2 green chillies, finely chopped ½ teaspoon ginger paste ½ teaspoon roasted cumin powder ½ teaspoon chaat masala ¼ teaspoon black pepper powder 3 tablespoons cornflour ½ cup breadcrumbs Salt to taste Oil for deep-frying
In a bowl, mash potatoes, peas and finely chopped spinach. Add green chillies, ginger paste, cumin powder, chaat masala, pepper and salt.
Mix everything nicely and then divide the dough into equal portions. Flatten each portion in your palm, place grated cheese in the middle and close by bringing the edges together.
Roll each portion into a smooth ball, ensuring the cheese is filled inside. Dip the ball in a cornflour slurry and coat evenly with the breadcrumbs.
In a pan, heat oil on medium flame and fry the balls in batches, turning gently until the breadcrumb coating turns crisp and golden from all sides.
Drain the cheese balls on tissue paper and serve instantly with mint chutney or a sweet-and-spicy dip.
