Dark chocolate kaju katli presents a decadent modern twist on the iconic cashew diamond sweet. By combining smooth cashew flour dough with rich dark cocoa powder or melted dark chocolate, this fusion mithai delivers a perfect balance of nutty richness and bitter-sweet elegance. It makes a striking visual contrast on Diwali 2026 sweet platters while catering to contemporary palates.
1 cup raw cashews (finely powdered) 1/2 cup granulated sugar 1/4 cup water 2 tablespoons dark cocoa powder or melted dark chocolate (70 percent) 1 teaspoon pure desi ghee 1/4 teaspoon cardamom powder Edible silver leaf (vark) for decoration (optional)
Heat the sugar and water in a non-stick pan over medium flame, stirring until the sugar dissolves completely and forms a sticky one-thread syrup.
Add the finely ground cashew powder and cardamom powder into the syrup, stirring continuously on low heat until the mixture forms a smooth dough that leaves the sides of the pan.
Divide the warm cashew dough into two halves, kneading dark cocoa powder or melted dark chocolate into one half to create a deep chocolate layer.
Roll both dough halves between parchment sheets, layer the chocolate dough over the plain cashew dough, roll gently to combine, apply silver leaf if using, and cut into neat diamond shapes once cooled.
