Soan papdi often gets a bad reputation as the ultimate festive regifting sweet, but this coffee-infused artisanal version transforms it into a crave-able gourmet treat for Diwali 2026. Crisp, flaky layers of caramelized sugar and gram flour are elevated with bold espresso powder, delivering a fine melt-in-the-mouth texture alongside a sophisticated coffee kick that guarantees guests will ask for seconds.
1 cup all-purpose flour (maida) 1 cup gram flour (besan) 1 cup pure desi ghee (melted) 1.5 cups granulated sugar 3/4 cup water 1.5 tablespoons instant espresso powder dissolved in 1 tablespoon hot water 1/2 teaspoon cardamom powder 2 tablespoons chopped pistachios and almonds for garnishing
Roast the all-purpose flour and besan together in melted desi ghee over low heat for eight to ten minutes until light golden and aromatic, then remove from heat and keep warm.
Combine the sugar, water, and dissolved espresso mixture in a heavy saucepan, heating over medium flame until it reaches a thick, golden hard-ball stage syrup.
Pour the hot coffee syrup carefully onto a greased marble slab or heat-proof tray, letting it cool slightly before stretching and folding the pliable sugar repeatedly using forks to build delicate syrup strands.
Incorporate the warm roasted flour mixture into the stretched sugar strands, pulling and folding continuously to form fine, flaky thread-like layers, then press gently into a tray, top with nuts, and cut into light squares.
