Paddu, also known as paniyaram, guliyappa, or appe, is a popular South Indian breakfast or snack made using fermented dosa or idli batter. Cooked in a special paddu pan, these round dumplings are crispy outside and soft inside.
2 cups fermented idli or dosa batter 1 finely chopped onion 1 finely chopped green chilli 1 tsp grated ginger 2 tbsp chopped coriander leaves Salt to taste 1-2 tsp oil for cooking
Mix chopped onion, chilli, ginger, coriander, and salt into the batter.
Grease each cavity with a little oil and heat.
Fill each cavity 3/4 full with the batter.
Cover and cook on medium flame until the base turns golden, then flip and cook the other side.
Enjoy with coconut chutney or tomato chutney!
